Mediterranean Smash Tacos
Mediterranean Style Beef Smash Tacos
Any fresh herbs that you love are likely to do well here… and toppings are subjective! Throw on whatever you think sounds bomb. This recipe should serve about four people depending on how hungry they are, I doubled it in the video!
Smash Tacos:
1lb ground beef
2 eggs
1/3 cup fresh cilantro
1/2 cup fresh parm
1 small or 2 big shallots
1 portobello mushroom
3/4 tspn of garlic powder, paprika, onion powder, salt to taste
Zest of a lemon
Tortillas
Avocado oil for cooking
Yogurt Sauce:
1/2 cup plain greek yogurt
1/2 tspn of garlic powder
Juice of a 1/2 lemon
1 teaspoon of pickle juice (okay without this too!)
Salt to taste
Toppings:
2 green onions, sliced thin
Fresh cilanto
Avocado
Microgreens
Instructions:
Blend mushroom and shallot in a food processor, or mince up as small as possible.
Put mixture into bowl with ground beef, cilantro, eggs, lemon zest, parm and seasonings. Mix well until fully integrated.
Cut out parchment paper in rough size to tortillas. Lay tortilla down and grab a small handful of beef mixture and smush hard into tortilla until a very thin layer remains. Use a patty press if you have one, makes it perfect! Repeat until all beef is gone.
Make your yogurt sauce by combining yogurt, lemon juice, pickle juice, garlic powder and salt until it dances on your touch with flavor.
Drizzle some avocado oil until a pan and preheat for a couple minutes on med-high so pan is very hot before you start cooking.
Cook each taco, meat side down first for about 1.5-2 min (or until super charred) and flip over until desired toastiness. When finished let it cool on a paper towel so crispiness remains! Repeat until all tacos are cooked.
Top with your yogurt sauce and preferred toppings and enjoy hot!
