Aguachile

Aguachile

One of my favorite quick (but have to prep ahead) dishes to make in the summer. It is SO unbelievably fresh and delicious and a total shop stopper.

Serves 4-6

Ingredients:

  • 1 pound raw shrimp (peeled and deveined, tails removed)

  • 8 limes

  • salt

  • 1 garlic clove

  • 1 head of cilantro

  • 2 jalapeños, sliced in half lengthwise (remove seeds if you don’t want too spicy)

  • 1 serrano chili, sliced in half lengthwise (remove seeds if you don’t want too spicy)

Toppings

  • Avocado

  • Pickled Shallot or Red Onion

  • Cilantro and/or chives

  • Your favorite Tortilla Chips (or plantain chips!)

Instructions:

  1. Slice the shrimp in half (lengthwise) and remove any veins or tails.  Place in a shallow serving dish in one layer if possible. Squeeze with enough lime to cover the shrimp- which will cook the shrimp, turning them slightly pink. Sprinkle with a little salt. Turn shrimp over as needed to cook both sides in the lime juice – this will take about 20-30 minutes minimum, I like to do it a couple hours ahead.

  2. Once shrimp is cooked, take 3/4-1 cup of the juice and put it in a vlender with cilantro, peppers, garlic and salt.

  3. Pour the aguachile marinade over the shrimp and toss to coat. Top with avocado, cilantro and/or chives and shallots. It is best served cold, so throw it back in the fridge for a bit if you can then enjoy!
